a baby shower hit


Last weekend was my best friend’s baby shower and my job was to bring hummus, guacamole and raw chocolate of course (I am pretty much not allowed to leave home without it). However being a procrastinator, I went to the grocery store on the morning of the shower, and surprise surprise there were no ripe avocados. So I had to get creative! I had been experimenting with raw food nut pates and was obsessed with a sun-dried tomato & cashew recipe, but I wanted to try something new: a pistachio pate! It was definitely a hit, and since the shower I have been bombarded with several texts and emails for the recipe. So here it is!

The Complete Book of Raw Food

  • 1 ½ cups raw pistachios, unsoaked or 2 cups soaked pistachios (soaking nuts & discarding soak water helps to remove enzyme inhibitors, making them more digestible)
  • ½ cup extra virgin olive oil
  • 5 leaves fresh basil or 2/3 tsp dried basil
  • 1 tbsp lime juice
  • 1 tbsp bragg’s soy or nama shoyu
  • 1 clove garlic
  • 1/8 tsp cayenne pepper few dashes chili powder
  • 1/8 tsp cumin

Place the pistachios in a food processor and process until it is a coarse powder.  Add the remaining ingredients and process until smooth.

Sun-Dried Tomato Bliss Pate
The Complete Book of Raw Food

  • 2 cups cashews (a source of tryptophan, an amino acid that converts to serotonin – our happy neurotransmitter, and then melatonin our sleepy one)
  • 1 red pepper, cored and seeded
  • juice of 1 lemon
  • 1 cup soaked sun-dried tomatoes (with soaking water, or filtered water)
  • basil, dill, garlic, rosemary to taste
  • 2 tbsp miso paste
  • 2 tbsp tahini (or brown unhulled sesame seed butter – a great source of calcium)

Add water as needed and blend in food processor until smooth
To serve: eat on crackers or with vegetable sticks or scoop into Portobello mushrooms and garnish with avocado, olives, carrots etc.
